Khao Chae (or Khao Songkran) comes in two distinct varieties: the rustic “Chao Ban” style using firm Sao Hai rice with minimal sides, and the refined “Chao Wang” royal style featuring meticulously polished aged jasmine rice infused with flower petals.

Originally a Mon dish, royal-style Khao Chae was introduced to King Rama 4 by a royal consort and later popularized by Mom Luang Nueng Nilrat during King Rama 5’s reign.

Jim Thompson’s rendition preserves both authentic styles while subtly adapting for contemporary palates. Our meticulous preparation ensures cultural integrity with a refined dining experience, making it the perfect centerpiece for celebrating the Khao Chae festival.
